Recipe of the week comes from Pamela Kemp

Pamela provided 2 excellent recipes this week, a Lemon Drizzle Cake and also a delicious Chocolate Orange Drizzle Cake

Tomorrow we have our monthly charity event in aid of Cash4Kids.

Staff will be hoping to try out some of  Pamela's recipes



Lemon Drizzle Cake made by Pamela Kemp
Lemon Drizzle Cake

Ingredients
4oz margarine
4oz sugar
2 eggs
4 oz sifted self-rising flour
1/5 teaspoon of baking powder
1 tablespoon milk
1 lemon, juice and the rind
3 tablespoons Castor sugar
Approx. 2 tablespoons Lemon curd

Method

1.Beat margarine and sugar until pale in colour
2. Add 1 egg at the time and mix through
3. Add grated rind of the lemon
4. Add sifted flour and baking powder
5. Add little milk
6. Place the mixture into 2lb loaf tin with greaseproof paper on the bottom
7. Bake Gas 4 for 20-30 mins until a screw comes out clean
 
Topping
1. Place juice of the lemon and caster sugar in small bowl and leave until cake is ready
 
Assemble
1.When cake is cooked, leave in the loaf tin. Pierce with a skewer across the cake. Drizzle the castor sugar mix over the top and leave to cool
2. Remove the cake from the tin. Slice across the middle. Spread the lemon curd on the bottom half and then place the top half on.
3. Cut into slices and half for smaller pieces.

Chocolate Orange Drizzle Cake

Ingredients
4oz margarine
4oz sugar
2 eggs
4 oz sifted self-rising flour
Chocolate Orange Drizzle Cake made by Pamela Kemp
1/5 teaspoon of baking powder
1 tablespoon milk
2 oranges just the rind, strips (not finely grated)
6 pieces of Terry’s chocolate orange
50g sugar
50ml water sugar
 
Topping
1.Dissolve the 50ml water and 50g of sugar in a pan. Bring to the boil to 2 mins. Take of the heat.
2.Add the strips of orange rind and leave to cool
3. Once cooled strain the rind. Keeping the orange syrup
4. Put aside until required.

Method

5. Add little milk and chopped chocolate orange pieces
6. Place the mixture into 2lb loaf tin with greaseproof paper on the bottom
7. Bake Gas 4 for 20-30 mins until a skewer comes out clean
 
Assemble
1.When cake is cooked, leave in the loaf tin. Pierce with a skewer across the cake. Drizzle the orange sugar syrup over the top and leave to cool
2. Remove from the tin and cut into slices and half for smaller pieces.
3. ENJOY

If there is left over orange sugar syrup, don’t waste. Add chilled fizzy water and the juice of the left over 2 oranges. Lovely.
